Having optional closed captioning leaves less room for confusion, I think, and offers the trainer/coach more opportunities to be specific and clear about reinforcing details or specific ideas.<br /><br />Accessible training, or the lack thereof, can be seen in a lot of hard copy martial arts and sports books--poor contrast, only one angle, shots are too far or too close, etc. There really is an art to presenting good training materials. (I focused on 19th century rhet instruction in my master's research & thesis.)<BR/><BR/>The shift after the civil war has got more to do with the changing contexts of the university student and the "highest purposes of discourse" having changed in American culture at large. Composition pedagogy just had yet to catch up to some very rapid postbellum changes. Enter "current-traditional" pedagogy.<BR/><BR/>I'd recommend Robert Connors' book (Composition-Rhetoric) if you want to understand this period--it's usually pretty brutally oversimplified, and Connors does a good job of breaking down a pretty interesting time in comp/rhet history.
